Here’s a fast to make, easy to prep and cook meal, that’s high in omega-3’s, fiber, vitamin’s A, C, and K, plus plenty of antioxidants.
I used Trident Seafoods wild Alaskan salmon burgers, but you can use salmon burgers of your choice, or even make them. Just look for burgers that have a limited ingredient list, preferably just fish, oil, and spices.
I also used a sriracha sauce I love from Steve’s Paleo Goods. You can use whatever sriracha sauce you prefer, but I would recommend finding one without any weird ingredients. You can even make your own if you have access to red jalapenos and red serrano peppers.
Salmon Burgers & Spicy Broccoli
- 2 salmon burgers
- 2 tbsp coconut oil
- 1 large sliced shallot
- 4 cups chopped broccoli (fresh or frozen)
- 1/2 cup veggie or chicken broth
- 1 tsp tamari
- 1-2 tbsp sriracha
- 1 clove garlic, minced
- 1/4 cup sliced almonds
Cook salmon burgers according to package directions.
Meanwhile, heat the coconut oil in a medium to large pan until it runs easily around the pan. Add the shallot, and cook for about a minute, stirring often, until lightly browned and softened. Add broccoli to pan and combine well with oil and shallots. Put a lid or some foil over the pan to help hold the heat in and cook the broccoli. Stir often.
Cook the broccoli until it starts to brown a bit from the heat of the pan, 5-8 minutes. Add the broth to the pan to prevent the broccoli and shallots from burning, and continue cooking for 6-8 minutes longer, until the broccoli is softened to your liking.
Add the garlic, tamari, sriracha, and sliced almonds to the pan and cook for a few minutes, just to soften the garlic and heat the sauce through.
Plate with the salmon burgers, and enjoy a healthy, satisfying meal!
